If you follow me on Instagram, then you saw last week I made this delicious lemon cake with my friends. This cake is perfectly moist and very fresh, everyone will love it. I can’t wait for to make this for my family and friends for our housewarming/my 22nd birthday party coming up in a month-ish.
A little disclaimer, I didn’t come up with this recipe, I found it on the Take a Veg YouTube channel. The only thing I did differently was times the recipe by one and a half to fill the pan I had. If you want to use a loaf pan, follow the original recipe on her channel.
The Best Vegan Lemon Bunt Cake
❀ 2 and 1/4 cups of all purpose flour
❀ 3/4 cup + 6 Tbsp of sugar
❀ 3 tsp of baking powder
❀ 3/4 tsp of salt
❀ 3/4 cup + 6 Tbsp of almond milk (or your favorite plant milk)
❀ 3/4 cup of melted vegan butter
❀ 2 and 1/4 tsp of vanilla extract
❀ 6 Tbsp of lemon juice
❀ 3 Tbsp of lemon zest
1 and 1/2 Tbsp of lemon juice
3/4 cup of icing sugar
