Happy almost Valentines Day, friends! For this V-Day, #TreatYoSelf and make something yummy for you or for you and your boo. For this post, I decided to collab with myself and post two V-Day recipes, one here on my personal blog and one on my group blog, VegFriends. The recipe on VegFriends is on the more healthier side, and the recipe here is not, but both are delicious and super simple! For the healthier recipe, click HERE. Now onto the cookie recipe!
A little disclaimer here, I didn’t come up with this cool hack. I saw a few nonvegan versions of it on Pinterest and I just veganized it!
What You Need:
1 box of vegan cake mix (I used this one HERE)*
1/2 a cup of vegetable oil
2 flax eggs or another egg replacer (What’s a flax egg?)
1 can of icing or homemade icing*
What You Do:
- Make the flax egg and let sit for 10 minutes while you preheat the oven to 350 degrees.
- Mix the ingredients together, then roll into 1 in balls and place onto cookie sheet about 2 inches apart. I put 9 cookies on one sheet and 9 on the other.
- Bake for 12-14 minutes and let cool for 20-30 minutes or until firm.
- Use a butter knife or spatula to ice the cookies, and put together to make little sandwiches.

*Triple check your cake mix is vegan! I did this the first time when testing and found out I was using cake mix with sodium casenite in it, BLEH!
