Growing up, having hot chocolate around this time of year was a given! We would drive around, and look at the lights, or make it after a cold day outside playing in the leaves. Back then we used a powder mix and added it to skim milk. Now that I’m older and vegan, I thought I would try to make a healthy hot chocolate for this time of year. This was also my first time trying Dandies, the vegan marshmallows, they are so good, waaay better than non-vegan marshmallows.
VEGAN HOT CHOCOLATE
Simple. Easy. Delicious.
INGREDIENTS (FOR ONE SERVING)
1 cup of almond milk (I used Silk Original Organic Almond Milk)
1 Tbsp of cocoa powder
1/2 tsp of maca root powder (read about its health benefits here)
1 Tbsp of coconut sugar (can sub for maple syrup)
Pinch of pink Himalayan salt
Vegan Marshmallows (I used Dandies, buy here)
1. In a small saucepan, add almond milk, cocoa powder, maca powder, coconut sugar (or maple syrup), and a pinch of salt, and whisk over medium-low heat.
2. Stir constantly, until combined and heated, be careful not to burn it!
3. Pour into mug, top with vegan marshmallows, and enjoy!
